Breakfast for Supper

I made this breakfast casserole with some leftover ingredients from Thanksgiving that were sitting in my refrigerator including bulk sausage, eggs, red bell pepper, onions, cheddar cheese, organic white bread, and a pint of half and half.  While I do not especially enjoy everyday cooking, it is healthy and economical.  And . . . my refrigerator is less cluttered.

Why I like cats


I recently realized why I like cats. Cats, unlike human beings, are blissfully simple. Cats need dry food that you scoop from a bag, fresh water, fresh litter, a couple vet visits per year, and a couple hugs per day. Assuming that your fuzzy friend is healthy and has not experienced any trauma, he/she will love you for life.

Long time no blog

So, I have not blogged in a really long time. I am trying to finish up coursework for two Fall classes - Presbyterian Polity and Grief and Loss. I had surgery in October and have a three month extension that expires Feb 12. So much writing and so little time . . . I also am taking three spring classes. Yeesh!
