So Long


I just LOVE these little oranges. 
Since Christmas, I've consumed four a day -
Monday through Friday. 

They are tasty, healthy, and entirely portable.  Yesterday, I went to King Soopers to pick up yogurt, fruit and vegetables.  I wasn't the only person who was disappointed to find out that Cuties Season is now over.

While I order most of my groceries online, the store that is used to fill the King Soopers HomeShop orders for my area is less than stellar and has a questionable selection of dairy and produce.  Because I eat very little meat - mostly poultry and fish - I'm picky about my yogurt, cheese, fruit and vegetables.  The King Soopers closest to me is awesome.  They even stock Maytag Blue Cheese.

Cowboy Bars


These are quite good.  I made mine in a 10x12 disposable foil pan instead of a 9x13 Pyrex baking dish because I did not feel like cleaning up any more kitchen clutter.

COWBOY BARS
º 1 stick butter, softened
º ½ cup brown sugar
º ½ cup white sugar
º 1 egg
º ¾ tsp vanilla
º 3 T milk
º 1 cup flour (white or whole wheat)
º ¾ tsp baking soda
º ¼ tsp salt
º 1 cup quick oats
º ¾ cups chocolate chips
º ½ cup chopped nuts
º ½ cup coconut (optional)

Cream together the butter and the sugars. Add eggs, vanilla, and milk and beat well. Combine flour, baking soda, salt, and oats. Stir in chocolate chips, nuts, and coconut. Spread in a greased 9x13 pan. Bake at 350 degrees for 25-30 minutes.  Let cool, then cut into bars.
